In the old testament, people relied on their own minds to understand God's law, so he had to be pretty clear cut about it. In the new testament, Jesus left us with the Holy Spirit, thereby "fulfilling the Law" so that we could understand it through the Holy Spirit, instead of relying on our own understanding. We became enlightened through the Holy Spirit, and that is why it's ok to eat pork and other foods that were forbidden in the old testament. If you ask your doctor, the foods that are mentioned as "unclean" in the old testament are really not very good for you. Their nutritional value is not as great as other foods. After being enlightened by the Holy Spirit, we are given the choice because we know that it's not really good for us, but in moderation, it also won't really do harm. That's why Jesus said that what goes into our mouths doesn't need to be considered "unclean", it's what comes out of our mouths that we need to worry about being "unclean."

Jesus meant that believing in Him was now the way to the Father. That is why the curtain in the temple was torn in two, from top to bottom, when He died on the cross. No one comes to God now by keeping the law; it is by repentance of sin and acceptance of Jesus Christ as savior.
Gentile believers were never under Levitical law with regard to forbidden foods, anyway.

Jesus completed the Law, He lived a life and never violated it, so the Law was broken. Now faith in Jesus saves, not obedience of the Law.

All the sacrafices of the OT was a type of Christ, He was
the Passover Lamb and the blood on the doorpost was
a type of Christ. He came to fulfill the law and we are free
to eat of all meat, nothing is unclean today.

the Law was temporary, and spoke of the coming of the Christ. certain practices, I believe even eating ones since He said what defiles a man is what comes out of his heart not what goes into his stomach, were ended, as they signified certain principles such as setting yourself apart to God and obedience, but have no use in the new covenant.
