This is a good question. Especially since men have the same number of ribs as women.
But we know better now, don't we?
Evolution shows that the female is the default sex, and that the male is a later mutation. As such, the female came first.
The story about Adam shows a near-east tribal storyteller's desire to place the male as the first creation and then show the female as a complete dependency, not of God, but of the male, since she's supposedly made from one of his body parts.
It also (unfortunately) shows the Judeo/Christian/Islamic God as severely limited in skills and reasoning ability, like most of the other bible stories.

Because, after genetically blending different species that already existed, god made Adam, was the first of his species.
When god realized that Adam was lonely and could not reproduce with another species, he put Adam to sleep (anethstetic) and used Adams DNA to genetically create a female of his species that he could reproduce with. I wonder how many failed experiments there were before he got it right.
jeeez. I'm just kidding. Thought it was as believable a story as the original one.

This goes back to the legend of adams first wife (who was not made of his rib) and was created equal to him. She wouldn't submit, he didn't like it, god cast her out. The reason he made eve from adam's rib was to show her that she was part of her husband and therefore subject to him. Woman was no longer equal.

He took from Adam a strong reminder of what He had one (ever broken a rib?--it's a killer!) and made Eve of a part of Adam to remind them that one was made for the other. She was his helpmate, not his slave or"weaker sex" and Adam was instructed to work for her, tilling the earth he came from, while she created new life. She couldn't exist without him, and he needed her. Neither had domination, and neither had "first rights".

Because he creates Adam out of dust to be in his like image. He didn't need a rib for that. But he used Adams rib to make a mate for him.

From my understanding, i think it has to do with the nature of a woman. She's delicate, and if you try to be too controlling, you can break her. If you're too neglectful, she'll break some other way. But I'm not indicating that she's weak, being a woman myself I wouldn't do that. But I guess that's how the rib bone represents a woman. She's not straight, or perfect. And she must be treated with love and respect.

A woman came out of a man's rib. Not from his feet to be walked on, not from his head to be superior over, but from his side to be equal. Under the arm to be protected and next to the heart to be loved.

Eve was created from Adam. "flesh of my flesh and bone of my bone". This was not necessary but is a good illustration of the biblical relationship between a man and a woman.
