I just wanted to know what does a bakery assistant do.

Depends on the store, but probably stuff like:
Wait on customers
take special orders from customers
decorate and ice cakes
bake cakes, cookies, pies, etc.
clean equipment
wash dishes (by hand or dish machine)
sweep/mop

a bakery assistant helps assist the baker, pretty much help prepare all baked goods, helps with ordering, and sales, special orders, and takes charge in the bakers when the baker is absent.
