Perfringens food poisoning is caused by a toxic by-product of a bacteria called Clostridium perfringens.

C. perfringens exists in dust and grows best on warm foods that are not kept warm enough to kill off bacteria. Typically, this happens on foods left out on the counter for too long.

The bacteria themselves are not the problem. But when the bacteria grow, they secrete a toxin that can cause diarrhea. Sometimes vomiting is involved, but usually it's diarrhea. Incubation time is 6 to 18 hours. it goes away in a day or so and it isn't contagious between people -- just the people who ate the food.
