I want to make a cake sort of like this one. I see that they used what looks like regular icing. I want to use fondant. How can I incorperate the fondant on this cake yet still giving it the look of "hair"? would I take a fork and "carve" hair?

any suggestions?

Why use fondant unless you're very experienced and it doesn't sound like you are. Use regular frosting and "comb" in the hair. You'll have an extremely hard time getting fondant to tightly cover that shape.
By the way, that cake is sick, what kind of party are you having?

I would go to a ckae specialist or take a class at a community college to get the knowledge and expertise in order to take on such a task.

it looks like the used a fork to carve it. it looks like they airbrushed it. you could probably apply brown icing color on it with a paintbrush & rub off the excess to get the color right.
