an application is a software that allows you to do things according to your needs such as msword, excel, powerpoint etc..
a software on the otherhand generally speaks of the platform on where this application runs, they basically help the application perform their usual job.

high level languages such as vb, c++, .net can create this programs but honestly i don't know which of these compilers have been used to create these messenger.

You have to know what language Google Talk or Yahoo Messinger was written in to determine what compiler was used. Each language has its own unique compiler.
