The only thing I know is I caught a 40# cat fish one time and I cut it up in nuggets and it took the older taste the more fishy tast from it. But it was soaked in milk all night. When you eat a younger cat fish their taste is grand but the older they get the more of a fish taste. Hope this helps

I don't think anyone cooks fish in milk. Normally you soak the fish in milk prior to cooking it. It removes some fishy taste.

Then you pan fry or broil or bake it as usual.

poaches it, and probably removes some fishy smell. but if the fish smells fishy, it's probably old anyway and not fit to eat, IMO.

I know some catfish and deer meat is often soaked in milk prior to cooking to remove gamey flavors.....
