Bananas Foster Pound Cake

3 sticks butter
3 cups sugar
5 large, fresh eggs
3 overripe bananas (remove any bruises)
3 Tbsp. half & half
1½ tsp. good vanilla
3 cups flour
1 tsp. baking powder
½ tsp. salt

PREHEAT oven to 350ºF. Grease & flour your tube pan. Mash the bananas; add the vanilla and half & half to the banana, and mix well. In another bowl mix combine the flour, BP, and salt.

Cream the butter and sugar until light. Add the eggs one at a time, and beat well after each one. Add banana mixture, mix well. Then gently stir in flour mixture until well blended. Scrape down the sides of the bowl about half-way thru mixing.

Spoon the batter into the prepared pan, smoothing top. Tap pan on counter to remove air bubbles.

Bake in middle of the oven for 45 min. Turn pan around, and bake for approx. 20 minutes or until done. Do not overbake. Use toothpick test for doneness.

Allow cake to cool in pan for at least 15-20 minutes, then turn out onto a cooling rack. Top w/ warm glaze (below), and serve any leftover glaze on the side.

GLAZE:
1 stick butter
½ cup light brown sugar
1 Tbsp.. rum
3 Tbsp. Banana liquer

COMBINE the ingredients in a saucepan over medium heat, and bring to a boil, stirring constantly. Cook for about three minutes and then take off the stove.

Chocolate Pudding Cake

3/4 cup granulated sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
½ cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine

Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).

TOPPING:
½ cup of granulated sugar
½ cup brown sugar
1/4 cup cocoa

Mix topping sugars and cocoa together and sprinkle dry ingredients over batter. Pour 1 ½ cups of tap water over all. DO NOT STIR.

Place in oven and bake at 350ºF for 45 minutes or until topping is done. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.)

Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.

Killer Carrot Cake
1½ cups shredded carrot
2 sticks butter, softened
2 tsp. orange zest, optional
2 cups granulated sugar
4 eggs, separated
1 tsp. baking soda
1 cup buttermilk
2 cups all-purpose flour
1/2 tsp. ground cinnamon, optional
1 tsp. vanilla
1/2 cup chopped nuts
Cream Cheese Icing (recipe follows)

1. Shred or finely grate about 4 carrots to produce desired amount. Put shredded carrots on a glass pie plate, cover with plastic wrap and cook in the microwave for a minute or so to steam the carrots and soften them.
2. Remove from microwave and blot moisture off the carrot shreds with a paper towel. Set cooked, shredded carrot aside.
3. Beat butter and sugar together until creamy. Add egg yolks, one at a time, beating after each addition.
4. Stir baking soda into buttermilk. Add flour and cinnamon into batter, alternating with buttermilk mixture.
5. Stir in vanilla, shredded carrots and nuts.
6. Beat egg whites until peaks form and fold into mixture.
7. Pour into three greased and floured (8- or 9-inch) layer pans. Bake in a preheated 325-degree oven for 30 to 40 minutes or until cake is golden brown. Cool and ice.

Cream Cheese Icing
1 (8-oz.) pkg. cream cheese, softened
½ stick butter, softened
1 tsp. orange zest
1 tsp. vanilla
1 lb. confectioners' sugar
1/2 cup nuts, chopped fine

1. Beat cream cheese and butter.
2. Add vanilla, confectioners' sugar and nuts.
Continue beating until of spreading consistency. Spread on completely cooked cake layers.

This is so easy and no mess to clean up, as you mix it in the pan you bake it in. Plus it is wonderful if you are a chocolate lover.
HOT FUDGE SUNDAY CAKE
Stir together in a 9x9x2 inch baking dish until smooth:
1 cup flour
3/4 cup sugar
2 tablespoons cocoa
2 teaspoons baking soda
1/2 cup milk
1/4 teaspoon salt
2 tablespoons oil
1 teaspoon vanilla
Mix together well:
1 cup brown sugar
1/4 cup cocoa
Sprinkle over batter.
Pour 1 3/4 cup hot water over the top and bake at 350* for 40 minutes.
This makes a chocolate sauce under the cake. Spoon out and serve hot or cold. Wonderful with some ice cream on top.

heres one for a very moist chocolate cake

INGREDIENTS
1 cup margarine
1 3/4 cups white sugar
3 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups milk
2 1/2 cups all-purpose flour
6 tablespoons unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, cocoa, baking soda and salt. Set aside.
In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Chocolate Cake
INGREDIENTS

1/2 cup milk
1/2 cup grated semisweet chocolate
1 1/2 cups white sugar
2 eggs
3/4 cup sour cream
1 teaspoon baking soda
1 tablespoon water
2 cups cake flour
1/2 cup butter, softened

DIRECTIONS
Preheat oven to 350 degree F (175 degrees C). Grease and flour one 9 x 13 inch pan.
Grate the chocolate. In a small saucepan, boil the milk and chocolate until mixture forms a custard.
Cream the butter or margarine and sugar. Add eggs and sour cream to the creamed mixture.
Dissolve the baking soda in water, and add to the creamed mixture. Add the flour, and mix thoroughly. Add the chocolate mixture and beat well. Pour into a greased and floured 9x13 inch pan.
Bake at 350 degrees F (175 degrees C) for 40 minutes to one hour.

This is a good one: Baltimore Peach Cake ------- ------------ -------------------------------- 1 tablespoon butter -- softened 1 cup sugar 2 1/2 cups flour 3 teaspoons baking powder 1 1/2 cups milk 3/4 cup sugar mixed with 2 teaspoons cinnamon 5 large peaches -- peeled and sliced 2 tablespoons butter -- melted Preheat oven to 350. With electric mixer, blend first five ingredients. Spread in greased and floured 15x10" jelly roll pan, or 13x9" plus one 8" cake pan. Sprinkle half of cinnamon/sugar mixture lightly over dough base. Arrange peach slices by rows on top of base. Sprinkle with remainder of cinnamon/sugar mixture and drizzle melter butter over all. Bake for 25-30 minutes. (For thicker dough, omit 8" cake pan - use 13x9" pan only.)

Dominican Cake (Bizcocho Dominicano)

Dominican cake has a baked in pineapple filling, but you can use other fruits such as strawberry, orange or peach or pastry cream.

Serves 8 people

Before starting to cook: Grease and flour two 1 ½ inch deep by 8 inch diameter baking pans. Preheat oven to 350 degrees (175 degrees C). Sift together the flour and the baking powder together and set aside.

Batter Ingredients:

Beat together about 4 mins:
1 stick (1/2 cup) butter
1 stick (1/2 cup) margarine
1 ¼ cup sugar

One by one add the eggs, beating 1 min after each new egg:
3 eggs

Add slowly:
1 pinch of grated lime peel
2 TBSP. Vanilla extract

Alternatively separately mix 1/3 cup of orange juice first into batter above and mix well, then mix in 1/3 of flour/baking powder mix (about 2/3 plus 1/9 cup at a time) mixed well into batter above, continuing until all is mixed:

Sift together and set aside:
2 1/3 cup flour
2 tsp. Baking powder

1 cup orange juice


Meringue ingredients:
5 egg whites
½ cup sugar (for the caramel)
8 3/4 cup (2 1/2 lbs) powdered sugar, sifted (for the meringue)
½ cup water
¼ tsp salt
½ tsp cream of tartar (optional)

Filling ingredients:
4 cups pineapple, cut into cubes (or strawberry, orange, peach or use pastry cream)
1 cup water
1 cup sugar
½ tsp vanilla extract

Preparation:
1. To prepare the filling: Mix all the ingredients together and simmer covered over low heat until the pineapple is tender and you obtain the consistency of marmalade. Stir often to avoid scorching. Cool to room temperature. Reserve.
2. To prepare the cake batter: Beat together the margarine, butter and sugar until it is light and fluffy and has a very light yellow color (about 4 mins).One by one add the eggs and continue beating about a minute after adding each new egg. Slowly add the lime peel and the vanilla. Add one-third of the orange juice, and when it is well mixed, add one-third of the flour. Repeat adding the flour and juice in thirds and keep whisking until all is well-mixed before adding the next third. As soon as you have stopped mixing the last batch of flour, turn off the mixer, and you should have obtained a fluffy batter with smooth and even consistency.
3. Pour half the pineapple mixture in each baking pan. Make sure you do not disturb the greased and floured bottom in the pan. Pour half the batter in each pan. Bake until a knife inserted in the center comes out clean (about 30 mins). While the cake is baking, prepare the meringue.
4. To make the meringue: Prepare the caramel by boiling sugar and water over a very low heat until it reduces to a quarter of the original quantity. Make sure it doesn’t burn. In the meantime whisk the egg whites in a glass or stainless steel bowl until it forms peaks. Slowly add the sugar until it is completely mixed. Add the salt and cream of tartar while still whisking. Very slowly pour the caramel into the mixture while beating at high speed until all is mixed.
5. Cool down cakes to room temperature. Cut any crust that might have formed. Join both cakes marmalade side in. To decorate the cake spread the meringue on top and around the cake, adding decoration as you want to.
