Boil or steam some rice and in another pan heat up frozen peas and then add a pack of prawns and a pinch of five spice or mixed spice, do not add any water to this and do not overheat. As soon as the peas are pleasantly hot, drain any liquid from the pan and cover until the rice is ready. Mix everything together and serve with soy sauce or melt some butter into the rice. This is the easiest receipt I know, it is generally diet friendly and has a Chinese sort of feel although it is not Chinese as such. It goes well with prawn crackers and white wine or ginger ale..and if you want something more, chicken wings, spicy ones.

1. Steak, bake potatoes, garden salad strawberry shortcake for dessert
2. Spaghetti with meat sauce and garlic bread apple pie Al mode for dessert
3. Oven baked chicken with white rice and string beans chocolate cake for dessert
4. Chicken grilled salad with ranch dressing

You have all week to practice cooking these meals and if all else fails ordering from Boston Market or a Chinese restaurant might be your best bet

Baked chicken with veggies. It's always a winner.

Take 3 chicken breasts, remove fat and skin. Place them individually on a piece of aluminum foil along with some frozen California style mixed veggies. Season with Mrs. Dash, pepper, fresh garlic and oregano. Wrap up in foil then place them in the oven at 325F for 45 minutes.

Make a salad with canned Mandarin oranges and walnuts with raspberry vinaigrette. Serve with your freshly baked chicken and you have a hit.

This is one of the easiest recipes I know and it is always a success.

GOOD LUCK!!

Sandy
