There aren't just straight A, B, AB, and O types. A person can have AO or BO. If that were the case with the parents in this question, then yes they could have a O child. Since the question you asked states that the mother is AB it is not real likely that they would have a child with the O blood type. It is possible that the child was adopted or that the 'father' is not the 'biological father'.

Here's how it works:
The mother has two "letters": one from her mother, and one from her father. If her blood type is AB, it means that one parent gave her an A, and another gave her a B. That gives Mom AB blood.
Dad's blood type is a little trickier. O is a recessive gene--meaning if there is a more dominant one, such as A, it's not going to "win" and be the blood type. So, Dad could have AA blood (both parents gave him A) or AO (one parent gave him A, the other gave him O).
So, when Mom and Dad get together, the following can happen:
Mom gives baby A, Dad gives baby A; baby is A.
Mom gives baby B, Dad gives baby A: baby is AB
Mom gives baby A, Dad gives baby O: baby is A.
Mom gives baby B, Dad gives baby O: baby is B.
Mom has no O to give.

Basics: ABO blood grouping is an example of Multiple allelism ie here one gene, Isoagglutinogen (I gene) has 3 alleles which are I^A, I^B and i (I^A and I^B are co-dominant over recessive i) So, Father has blood group O means his genotype is ii (gamete- i) Mother has blood group AB so her genotype is I^AI^B (gamete- I^A and I^B) A simple cross shows that the child's genotype can be I^Ai (A blood group) or I^Bi (B blood group) Note: Blood types are inherited from our parents by receiving one allele from each parent , Hence, Blood group is dependent (as is clear from above) on BOTH mother and father's blood group

This is a great site to explain it all with a chart to figure out blood types.
I wanted to add that back int he sixties when they did my bloodtype they typed me as A- so growing up I thought I was A- until I got pregnant and they did the blood typing. Come to find out I was 0- like my Dad. My daughter is also 0- and my husband is A+. I think mistakes can be made like in my case. I would be tested just to be sure.
