The Catholic Church does not take the stories of creation in the Bible literally. Catholics believe the book of Genesis tells religious truth and not necessarily historical fact.
One of the religious truths is that God created everything and declared all was good.
Catholics can believe in the theory of evolution. Or not. The Church does not require belief in evolution.
On August 12, 1950 Pope Pius XII said in his encyclical Humani generis:
The Teaching Authority of the Church does not forbid that, in conformity with the present state of human sciences and sacred theology, research and discussions, on the part of men experienced in both fields, take place with regard to the doctrine of evolution, in as far as it inquires into the origin of the human body as coming from pre-existent and living matter - for the Catholic faith obliges us to hold that souls are immediately created by God.

The Church supports science in the discovery of God's creation. At this time, the theory of evolution is the most logical scientific explanation. However tomorrow someone may come up with a better idea.
As long as we believe that God started the whole thing, both the Bible and modern science can live in harmony.

This question is impossible to answer for many reasons. First, is the limitations of our concept of "time." And also our concept of the meaning of words. Just what does "create" mean in this question? Likely the world was not "created," as we think of the word created. "The world" is just a dot in the vast universe that likely has no beginning or no end. This is beyond our understanding. Now, I will turn this question around a little. How long does it take YOU to CREATE your own world? Your world is the only "world" that is important. You are in the process of creating it right now. Every decision you make, regardless of how unimportant it may seem at the time, helps to create your WORLD. And the world of your life --- right now --- is the only world you should be concerned about.

The Bible says that a day is like a thousand years to God. So, possibly it's taken 6 thousand years to create, and the day of rest, the Sabbath, will be at some future point, maybe the millenium?

A common misconception is that the earth was created in 6 days. If you look at Gen.1:2, you will see that the earth was already in existence BEFORE the first creative day started.
The 6 days of creation had nothing to do with the creation of the planet. Instead, they were huge time periods in which Jehovah prepared the already-existing earth for animal and human habitation.

7 days one day for light and dark, two for the heavens, three for the earth sea and plants, four for the Sun, the Moon, and the Stars, five for the Fishes and Birds [Beginning of Sexual Reproduction], six for the land animals (Cattle, Insects, Reptiles, Man), and the seventh day he rested, its not saying it took him seven days to finish, he could have done it in one but its suppost to be a model of how we live, work six out of the seven days in the week and rest on the sabbath, or whatever day you worship, god doesnt want you to over work yourself and also doesnt want you to be lazy
