My husband makes a cot. cheese summer salad that most everyone really likes, It consists of; 16oz. Cottage cheese (of course), about 2/3 cup of mayo,(you could use lo-cal), 1/2 medium size cucumber,sliced, 1 large red ripe tomato (cut in wedges), 1/2 red onion,(sliced fairly thin)... salt & pepper to taste. Mix the c.cheese and mayo together w/ salt & pepper, mix gently with veggies and serve on a bed of crisp lettuce. I would bet you could vary this with whatever vegetable,or, fruit that you like, maybe sub the seasonings accordingly

I can't stand the stuff, but my mom has always enjoyed it with
salt and pepper and a boiled egg, some radishes and/or green onions, maybe some tomato or green pepper sliced or cucumbers. Not all mixed up but on the plate separate but as a light summer lunch. Kind of different then the usual fruit combos.

Personally, I don't want any cottage cheese unless I have homemade mashed potatoes to eat with it....wont' eat it any other way, lol. However, my husband loves canned pineapple mixed with it...or any kind of canned fruit.

many, many things. you can mix it with jello, fruit cups, the occasional fruit salad. if you have time, a nice grilled chicken with the cottage cheese on it or a little honey

When i worked at a salad bar alot of people put peaches and whip cream in it. Its pretty good. I just use salt and pepper when i eat it.
