dont "go on" a diet.
diet is a way of life not a sprint. you have to change your eating habits.
find calorie/fitness calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 300-400cal off that number and thats how much you need to lose.
eat 5-6 small meals a day (eat every 2-3 hours)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise 4-6 times a week for 30-50min, light weight training
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)

The problem does not lie with you specifically, but with the way you're approaching the issue. A diet is flawed because it's temporary. If you want to keep off weight, you need to make a permanent change. Here's something I just posted on the issue (edited for relevancy):
To gain weight, you're taking in more calories than you burn on a regular basis. This increases fat stores and causes weight gain. Cut back on calories, do not eliminate them entirely - and I'll tell you why.
(most diets are of the starvation style - if yours is a legitimate, just skip the section below)
Our bodies are wired for SURVIVAL. Fat is a convenient storage vessel for metabolic energy; it is retained just in case the body cannot find sustenace for itself for a long period of time (perhaps as long as weeks at a time). When you begin to starve, your digestive system begins to grind to a halt, since it is no longer needed. Your hormone levels become terrible, and all hell breaks loose once you begin to eat again(you will). A fun chemical reaction occurs when you ingest carbohydrates of any kind after starvation - a massive insulin spike occurs, causing all of the carbohydrates you just ate to become fat, since you were starving and your body, wanting to survive, understandably wants to preclude this.
One makes themself fatter by starving. You may lose weight short term but I promise you will gain it all back and then some when you start to eat at the level you did before the crash diet.

If you want to loose weight three things are important.
1. reduce your calory intake a bit.
2. do regular airobic exercise (it does not have to be going to the gym. you can walk, wash cloths by hand, cleaning the house blah blah)
3. try to build a little bit of a muscle.
your problem, I guess, is you are focusing on only number one. that makes ur body to react by saving some fat for future use. this is due to a biological response that when the body sens some shortage tries to save what is available.
combine the three and u will see the difference in one month. do not forget to eat more before noon and less in the afternoon i.e. good breakfast normal lunch and little dinner

Ok, u said u go on a diet and gain of how u eat? hmm
U should try exercising to build the body.
Like for example
Walk 30 mins a day and bike 30 mins a day either outside or inside if u have a treadmill and exercise bike.

Drink a big glass with water and a little lemon juice every morning when you wake up to start you on the right foot. Don't eat "filler food" meaning crap you don't even feel like eating just to fill you up. It will just make you want the good stuff more. Increase the amount of fiber you eat which may make you feel more full. Make sure you have protein with each meal and if you feel like you just want to "get full" then over do it on the protein - not bread, crackers, cereal. Most importantly take good care of your self and treat yourself to nice things other than food, a pedicure, good book, new CD and enjoy the little things in life. Overeating will just make things worse.

Most likely one of 2 things are happening either a) you are cutting too many calories out of your diet and putting you body into "starvation" mode wherein everything you eat goes straight to fat because your body thinks it is starving to death and is actually malnourished;
or
b) It is the wrong kind of diet for your body type. Try seeing a dietitian to see what kind of long-term food choices are best for you that you can actually stick with.

Reanalyze your relationship with food. Diets aren't temporary they are lifestyle changes. You can't go back to your old eating habits or you WILL put the weight back on.

Put a picture of a fat woman (no affence)on your fridge and a picture of a skinny woman and every time you go to eat think of wich one you want to be.
