Whole cashews are considered more desireable because they look better & it takes more work to keep them intact.

Half pieces taste the same & are sold so as not to waste anything.

People like the look of whole cashews. Half pieces are looked at as damaged cashews. Besides you can make half cashews from whole, but not the other way around

The whole cashews are more desirable and take a bit of extra handling care to remain whole. The broken pieces are typically sorted out as the 'dregs', and therefore, less expensive. An interesting note about cashews: The outer shell (coat) of the seed contains the poison oak allergen urushiol, and may cause dermatitis in hypersensitive people. For that reason, I don't eat them because they give me a horrid headache but, thank goodness, no rash.
