Cherry Cream Floats

24 ounces frozen pitted cherries
1 cup sugar
Juice of 2 limes
2 cups seltzer
1/2 pint heavy cream
2 tablespoons confectioners' sugar
1 quart vanilla or cherry-vanilla ice cream
Maraschino cherries, for garnish

1. In a blender, puree the cherries, sugar and lime juice; strain into a pitcher and add the seltzer. Using an electric mixer, whip together the cream and confectioners' sugar until soft peaks form.

2. Scoop the ice cream into small glasses. Pour the homemade cherry soda over to fill and top with a dollop of whipped cream and a maraschino cherry.

Virgin strawberry margaritas! Clean and hull some strawberries, and then freeze for at least three hours. Put in the blender with some lime juice (about 2 tsp. per serving), and add sugar to taste. Also, add a little club soda or plain water, then whiz. Adjust the sugar if necessary. These are great for summer nights!

Another easy way to make home-made drinks is to make a simple syrup of 1 c. sugar and 1 c. water, and add your favorite flavorings (strawberry, lemon, rootbeer extract, whatever). Let cool, then add it to a glass of ice and some club soda.

My favorite: orange juleps. Get a handful of mint, and place it in a large jar (at least 2 l.) with several ice cubes and half a cup of sugar. Add the juice of one orange (and the rinds, if it's an organic orange). Cover, and shake up and down until the mint is well bruised. Then add club soda or plain water (about 1 liter).

Hope that gives you some good ideas! Grated ginger and lemon also makes a good base for home-made drinks. Oh, and chai is a favorite, hot or cold!
