Going to Night school? I think it is not easy to find an English grammer teacher (may be a Japanese person) who can always make correct sentence in the city where I live now.

What is the name for the traditional red-and-white Arab headdress?
or if you mean:
What do you call the red-and-white patterned design found in an Arab headdress?
FYI- Plaid is checkered. I've never seen a headdress with a plaid design. :) I don't think they would like it. Mostly the Scottish use the plaid design in their tartans. Westerners call it checkered. Something cowboys like to wear.

Try to stay away from using too much "of the"s. It makes the sentence too long and less accurate.
Also, the answer for that is called 'keffiyeh'

If you're asking about the name of the scarf:
What is the name of the red-and-white plaid scarf, with which some Arabs cover their heads?
If you're asking about the name of the pattern:
What is the name of the pattern of the red-and-white scarf, with which some Arabs cover their heads?

That way you're asking the name of the pattern, not the name of the scarf.
What is the name of the plaid scarf with a red and white pattern, which some Arabs cover their head with?
Isn't it called Turban or something like that?

If you want to know the name of the scarf (not the plaid)
"What is the name of the red and white plaid pattern scarf which some Arabs use to cover their heads?"
Grammar has an "a" not an "e".
Bestlegs...you never end a sentence with a preposition .(on, in with, etc)
Who's the Picasso who gave me a thumbs-down for being right???

What is the name of the red and white patterned scarf that some Arabs use to cover their heads?
I don't know if this is good grammar or not... good grammar is basically grammar that presents your idea is a straight forward manner or brings about a response in your reader etc. that you desire.
Yes, I love grammar but... it is really really complicated that you would need a Japanese student of English to figure it out.
Here is a question of my own attempt about can a prepositional phrase have a participle as its object? a patterned scarf? and can a subordinate clause modify a prepsitional phrase? I can worry myself sick about good grammar.
Use the advice I gave you above you cannot go wrong with it.
