Would you mind sharing with me (in detail) your favorite healthy meals/recipes? I am trying to eat better, but I guess I'm not very creative, because I end up feeling like my only choices are baked chicken and salads.
Please don't talk about snacks, because I am not much of a snacker. I like REAL MEALS!!! Thanks for your help.

blackened tofu!!! just take some tofu dip in a LITTLE bit of olive oil and put a bunch of spices on it put it in a frying pan with PAM and then vwala! instant deliciousness. put it on a sandwich with 35 calorie bread (or whole grain bread) and some tomato. yummy yummy.if you don't like tofu you can try it with chicken, but don't put olive oil on chicken.

Grilled turkey patty with a baked sweet potato and a side salad!!! Gotta love it. I take the turkey, measure it out, and season it with a little bit of Worchestershire sauce, pepper, garlic powder, and a bit of seasoning salt. Or if I want a different taste, I mix it with ground ginger and light soy sauce. It gets no better than that! I also mix in chopped onions. Not only do the onions add flavor, but they thicken the patty up a bit. I bake the potato in the oven, and use a pat of real butter, cinammon, and about a tsp. of dark brown sugar for seasoning. Sometimes, I just enjoy eating the potato plain. The salad is really simple to make. i just use what I have: greens or baby spinach, onion, tomato, bell pepper, mushrooms, maybe some carrots, and about 2 tbsp. of olive oil vinagrette. I sprinkle about a tsp. of cilantro and half an ounce of goat cheese on top. Talk about a meal fit for a queen! If I'm tired of salads, I usually make a fruit mixture out of strawberries, blackberries, cantaloupe, pineapple, or grapes. The key to eating healthy, for me, is all in the seasonings you use. It takes practice, but once you get good at cooking, you can make anything taste good. I keep my fats healthy, and I bake, broil, or grill everything.

I like buying frozen tilapia fillets at Wal-Mart and baking them for about 11 min at 350degrees. I season them with All-Purpose seasoning and some lemon. For sides I either buy the precut broccoli/cauliflower flowerettes, poke a few holes in the bag and microwave them for 12 min as the fish cooks.
I do the same for salmon. I love steaming vegetables....fill up a pot with about an inch of water toss in your cut veggies. Once the water begins to boil turn the heat down to medium and remove when they are cooked to your taste.

my favorite breakfast is pita pockets toasted with grilled chicken inside and then i put fresh salad or cucumbers inside.
i eat a lot of steamed veggies - all kids, whatever i have in my fridge - eggplant, snowpeas, broccoli, asparagus, onions, yuca, sweet potatoe (although its not a veggie) etc.
