I concur with Greg F...it depends on what I'm making.
Probably (I never really kept track of it) I use cheddar, grated or sliced, more often than any other type of cheese. I use it on or in tacos and burritos, and I like to sprinkle it on chili. I use it in omelets all the time, too.
One thing I know for sure: I almost never buy the bagged, pre-shredded cheeses. They taste OK, but they contain cornstarch and other ingredients, to keep the cheese from clumping together. Also, if you don't use the whole bag very quickly, the cheese gets moldy pretty fast. I just grate a block of cheese myself.
One exception, though...I buy mozzarella (for pizza) pre-shredded, because it's such a pain to shred it myself.
