I've been on countless "diets" over the months, but each has failed from my cravings, ussually from 6-10pm. Any tips on how to stop these diet-destroying monsters?

do not "go on" a diet. change your eating habits.
also it doesnt matter what time of the day you eat as long as you are not consuming more calories a day than you spend you are not gona gain weight.
find calorie/fitness calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 300-400cal off that number and thats how much you need to lose.
eat 5-6 small meals a day (eat every 2-3 hours)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise 4-6 times a week for 30-50min, light weight training
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)

Try making dinner your last meal. Or else, replace any bad foods you might eat from 6-10 PM with more healthy foods, such as grapes, yogurt, etc. Instead of snacking, drink some water. Sometimes we are really thirty, instead of hungry. Maybe chew some sugar free gum.

Breaking or making a habit usually takes 2 weeks. So, try this for two weeks, and it will become easier.

Get busy, find something to do to keep your mind off food. I don't really have certain times I have cravings. IT'S MIND OVER MATTER.
