The traditional name for a place where you could get alcohol, a meal, accommodation and stabling for your horses was a public house. Public houses had bars where you could go off the street and have a drink. The owner/licensee of a public house is a publican. The name "public house" is preserved in the name "pub". While the title "public house" remained in the UK, in Australia the name shifted to "hotel" and what used to be public houses are now called hotels. Even so, the licensee is still the publican and the place is still affectionately called a pub.

A publican is the owner of a hotel, which is why they are often referred to as pubs.
