I wouldn't lease a vehicle in the first place. Unless you're writing it off as a business expense, or for some reason you'll need to get rid of your car in 2-3 years (moving out of the country or whatever), it is a money-losing proposition compared to buying it outright. Any short term savings you get from the lower monthly payment will disappear at the end of the lease when you have nothing to show for it.
As far as which car is better, it depends on what your needs are. I'd pick the Matrix over the Caliber as far as wagons go, but you can probably get a better price on the Caliber. The Jettas a nicer car than the Civic but Jettas are also significant more expensive when comparably equipped, and VWs have below average reliability (source: Consumer Reports).

I love my 07 Jetta and its leased. I haven't driven a caliber or matrix, but I can tell you if you drive Honda, then a VW - you will be able to tell an immediate difference in the quality. VWs are quality cars. Call the VW dealer and set up an appt with an experienced VW salesman. They can show you all the features and you will be impressed.

In order: Caliber, Civic, Matrix, Jetta. The reasons for this are: american cars are cheap and are getting to be pretty reliable. chrysler products are made in america with american parts (some models) but are german influenced. hondas and toyotas are decent enough cars but repairs can get costly. VW's are by far the worst cars to buy. parts are much more expensive than other cars, and don't offer superior build quality or an exciting drive like BMW's or Mercedes.

Depending on the year, look up the tract record of each vehicle. Overall, the Honda carries the best record along with the Toyota Corolla. Repair cost are less on the Corolla than the Civic. Consumer Reports is a good place to start your search on new and used vehicles.

Do not get a Jetta, mine has been totally unreliable. My husband's civic has been great; no repairs in 7 years.
