The nose knows! It will smell nice and pineapple-y when it is ripe. Also, the pineapples we get here turn a nice golden color. Be sure to avoid pineapples with mold growing on the bottom.

When you can pull one of the leaves out easily from the top of the pineapple, it is considered ripe enough to eat. P.S. try sprinkling the flesh with pepper and it tastes sweeter. Don't mock, try it.

Hold the fruit in one hand and the leaves with the other. Gently - I said GENTLY rock the leaves from side to side. If they pull out, the fruit has gone over to the other side, but if you can sense a slight movement then it is ripe and should make good eating. No movement - put it back onto the shelf.

have a sniff, if it smells of nothing, it needs a few more days. If it smells sickly sweet/rancid, it is off. If it smells like a pineapple, it is fresh.

hold the top with one hand and press the bottom quite firmly with the other. it should "give" slightly. the more give, the riper the pineapple.
