Rice vinegar or a good fruit vinigar - wine will not hurt as it loses it alcohol state as it cooks (the alcohol evaporates) leaving the flavour of the wine only

There are many ways. However, try this for instance:

White-Wine Substitute: 1/3 cup white grape juice + 1 Tbs. rice vinegar
Red-Wine Substitute: 1/2 cup red or purple grape juice + 1 Tbs. strong tea + 1 Tbs. rice vinegar

broth or apple juice are good substitutes in equal measures.
