I don't know if anything counts as fiber that isn't cellulose, although there ARE other polysaccharides that you can't digest (like chitin). It's mostly in unrefined plant foods such as whole grains, beans, vegetables, etc.

I'm assuming you're asking about dietary fiber and cellulose.

Cellulose is a type of dietary fiber. It's the part of the plant cell walls that our bodies can't digest. For example, celery is mostly cellulose.

Dietary fibers include soluble fibers such as pectin... which can be found in apples and is the same stuff used to gel jams and jellies.

20 years ago, there was a health food bread that made claims that it was high in fiber because they added cellulose. It was later discovered the cellulose was from saw dust. Needless to say there was an uproar so they baker stopped that practice. It didn't hurt anyone since we can't digest cellulose. People were just upset that saw dust was put in their food when the baker could have used something else.

Cellulose (C6H10O5)n is a polysaccharide of beta-glucose. It forms the primary structural component of green plants. Fibers are of great importance in the biology of both plants and animals, for holding tissues together. Human uses for fibers are diverse. They can be spun into filaments, thread, string or rope. They can be used as a component of composite materials. They can also be matted into sheets to make products such as paper or felt. Fibers are often used in the manufacture of other materials.

cellulose makes up plant cell walls which is indigestable and fiber is undigestable organic matter which includes cellulose

fiber is usually found in grain based foods and plant foods
