He was an early microbiologist. He set milk cans around to see how fast they contaminated. Seems those by dusty-dung-laden roads grew pathogens quicker.
He also discovered that boiling for 20 minutes killed germs, but it would contaminate if exposed to air. Now we autoclave at 250 degrees to get them all, because boilings 212 does not prevent regrowth because some hardy microbes are spore-bearing rather than doubling themselves through binary fusion. Take note, Pasteurized milk will only slow spoilage because flash-pasturization only kills about 85 % of the microbes.
