I think the main reason is obvious, and you kind of know it by the rhetorical nature of your question... that they're not going to teach their kids something they themselves believe to be false.
BUT... a more subtle reason has to do with the scope of the two different Gods. The Christian God is hardly a parallel to Ganesha if you want to compare Christianity and Hinduism. It would be less of a stretch to compare Jesus and Vishnu. But if you really want to get into it, it's much more enlightening to see how Christians deal with the concept of the Brahma as compared to God, for "God" in Christianity is the Supreme Being, the Force which made and moves the Universe, the source of all light and all goodness, the originator of Wisdom. Is this not the Brahma?

Well when i was at school I did a short play to show Ganeshas story and to show how he got the elephants head, and my school had mainly white people. I think its more up to schools then parents to teach this. Its parents duty to teach then their own religion and language then school to teach the rest with parents help. If homework is set regarding this type of a topic by all means parents should inform their children on the particular topic. Im a hindu but i have knowledge of a few religions, my own religion taught to me by my parents and family, and other religions I learned from school and friends,

I KNOW!!! I KNOW!!!!!!!!! Ganesha doesn't exist- God does! So far no one has proved that God doesn't exist (they have proved Ganesha doesn't) - why do you think that is? WAIT- I KNOW THIS TOO!! Ganesha could not fit in God's sandals.
Why adore a god that can't compare in ANY WAY with the God of Abraham, Isaac and Jacob?
He is the Alpha and Omega, the Beginning and the End, the First and the Last...there is NONE that can compare to Him.
Why settle for anything less?

As a Christian, I believe God/ Jesus Christ is my personal God. I do not know who Ganesha is, but it sounds like you must believe in this. I must ask you to reassess your decision because there is only one true God. But if you don't, that is your choice. I will not teach my children this b/c I dont believe this Ganesha exists. Only Jesus can save us.

Because simply not having seen something yet is no excuse to start rolling dice about its existence, when reason can still be applied.
That's like asking, why do meteorologists refuse to teach their children that flying pigs are just as likely to exist on Venus as in Oklahoma?

Because Christians believe in only 1 god. And that people are formed in the image of God, now an elephant or a monkey etc.
