It is not safe for certain foods to be cool then cold and back and forth. Most dairy products and meats need to be at a constant temp to assure non spoilage. Also your refrigerator will use less power staying on in the middle position than it will trying to cool back down after you have switched it off. A full refrigerator and freezer use less energy than an empty one also as the other cold/frozen items keep the temperature even. So, leave it on and leave it in the middle position - if you find things too cold you can always turn it down more or if they are too warm turn it up. You will find your desired temp within a month or so.

It is probably safe to turn off a refrigerator at night; however, when you turn it back on in the morning it will use a significant amount of energy to get back down to the temperature you set using the setting knob. You will save a little energy using this technique because heat flow is related to the temperature gradient across the surface (Newton's Law of Cooling), but I do not believe it will be a significant savings. Setting the knob to cool instead of coolest and maintaining this setting would be the best method for conserving energy.

You should read your refridgerator's manual on power
consumption.
Turning your fridge off will spoil your meats, dairy and other
perishables. Germs grow rapidly in these conditions.
