Only some of the thumbs-up evolved into stars... the rest of the thumbs are still going strong on a parallel evolutionary trail.
There used to be thumbs-up (and down) for questions as well as for answers. They took away the thumb options for rating questions and gave us the stars instead, and left the rating options for answers as they were.

In the Southern Hemisphere, thumbs up are thumbs down to those of us in the Northern Hemisphere.

They didn't. Two separate concepts; quality and importance are not the same thing. Of course, this has nothing to do with biological evolution.
