Anything that works out your legs will help. Running (if your knees can handle the impact), biking, roller blading. lunges are great, jumping rope is another. Do a lot of stretching, make sure your legs are flexible and can withstand the impact and pressure of skiing. A blown knee is no fun at all (I have blown both). Also, do a variet of sit ups/crunches/core excersises. Your mid section is where most of your real stability comes from, so if you keep that strong you will have a much better time tearing it up on the slopes.

Many things are good for keeping in shape, but for skiing one of the best is to put something on the floor that is about 1 foot high (maybe less to start) and jump with both feet over it sideways. If you go back and forth several times you will build good skiing muscles.

One of the best single ways is mountain biking (not too many mountains in TX, but there are a few hills). Run for cardio, leg presses/lunges, etc. for leg strength.
