The RIAA hires companies to find sharers for them. The companies use modified versions of P2P applications such as Limewire, etc. They locate people sharing files, download samples, then they do a "whois" lookup and then send and infringement letter to the ISP to obtain the identity of the file sharer. Then they file a lawsuit against that person.

How they catch downloaders is by making files available and then watching who grabs them.

You can gain some protection by using PeerGuardian2.

The RIAA sues you not Limewire.

You might download music from one of many RIAA computers set up to catch people. When you download music they copy your ISP number with the date and time. Later they contact your ISP with the number and the date and the time to get your identity. All ISPs keep a record of who is using an ISP number at all times so manually changing your ISP number does not hide your identity.

The RIAA is always looking for people who allow uploading songs from their computer. If you allow songs to be uploaded from your computer you will very likely be sued. Very few people are stupid enough to take this risk, that is why everyone complains there are so few download sites for songs.

Music companies find you through your IP address. Everytime you download from limewire, you show your IP. From you IP, they can find out who your Internet Service Provider (ISP). From there they could contact your ISP and find out which home that IP was registered to.

The RIAA is who will sue you if you're caught. Most people are caught not by downloading they are caught by making their music collection available for others to download.
