I like celery and eat it like a salad, but I am not sure what to do with its leave

Can be used raw as a salad leaf or chopped and used in soups and stews. You can finely chop them and dry them out in the oven slowly, with salt over them to make celery salt.

Lots and lots of celery and onion goes into POTATO SOUP and it is delicious! Just cut up a potato (or two or three - I don't know how many people you have to fee) and drop it in boiling water. Then turn it down to about medium. Make sure you stir it frequently so that it doesn't stick to the bottom of the pot. Cook the potato and stir the potato until it kind of "becomes part of the water." It will get soupy - like. Maybe 20 minutes or so, Then drop in your chopped-up celery - as much as you want! - and one medium sized chopped onion. Add salt and pepper to taste, and as much butter as you feel comfortable with. Stir often, stir well, and lower the heat to simmer. Cook for about another 10-15 minutes. It's really delicious! And very nutritious.

Celery leaves are delicious eaten raw, they can be chopped up and used like a herb in stews, soup and caseroles. Just add them slightly later to a dish if you are say, sweating an onion and celery for the basics, add later like a softer herb i.e; parsley or basil, h'mm yum. Great with fish, chicken, etc. Moules marineire, very good.

I usually add the leaves to the salad as well, but I only chose the inside ones, the ones that are from the smaller stalks. They are a lot more tender and better tasting. You can feed the rest to your rabbit or yr paraqueet, or just add them to your compost bin.

Leaves can be chopped and used for seasoning in cooking, or eaten raw in a salad. I love it too.

I don't eat them raw, but I love saving those leafy tops to toss in stock. Excellent flavor.

Most people throw it away ,some use the leaves to add to their "compost" trash but i guess you could eat them if you wanted to..... Lettuce is the most wasted produce.. and either of them have any nutrition value
