Yes. When a document is scanned it ends up in a file, as an image, or as text through Optical Character Recognition (OCR) software. If it is a text file, then any word processing software can edit the file. If it is an image, then you will need a paint program of some kind and literally repaint the text you want to change. Think of an oil painting of a page of a book, you would paint over words and then paint on new words.

I've done this before, and the best way to do it, is scan as a PDF document. You'll have to have like Adobe Pro in order to alter the document, but it does work.

You need OCR (Optical Character Recognition) software, you can get a freebie at Sourceforge or Snapfiles.
