First we need to understand what it means to be a materialistic. The theory or attitude that physical well-being and worldly possessions constitute the greatest good and highest value in life is materialism A materialistic does not believe that there exist any thing other than the physical matters. The theory that physical matter is the only reality and that everything, including thought, feeling, mind, and will, can be explained in terms of matter and physical phenomena.
The world does not exist only on materialistic approach. When one is sad he may go for boozing to calm down. But there is another way i.e. consoling philosophically, affectionately that can have better impact.
So while being materialistic one needs to be a human being too.

Oh-Oh! I hope you haven't already called your dad "simplistic" to his face. That would be an insult.
You might say he is "pragmatic" or "practical" or "spiritual", but since I've never met the man it may not be correct to attribute such qualities to him.
Still, from the little you've said about him, I would describe your father as "genuine". I suspect that he is much more interested in Life than materialism, and I'm sure he has a lot to teach you if you're interested.

Someone that doesn't like an excessive abundance of objects is a minimalist / minimalistic, simplest / simplistic or immaterialistic....
If He believes in quality over quantity....thats just smart... you should call him intellegent.

For your father I suggest you ask a Japanese person; they have many concepts reflecting elegance and simplicity that translate into entire sentences in English.
Unfortunately materialism and greed have become euphemisms for avarice. It is entirely rational to want more than you currently have, next months rent, a weeks supply of food, (yes food is a material object) that ipod you like, a savings account etc, and as long as you obtain it honestly and don't work yourself into a hospital bed, it harms nobody. No one can totally avoid 'materialism' and expect to live very long.

If he was living in a monastery (which obviously he isn't) I'd say ascetic. Since he is living more mundanely, I'd say just practical. His lifestyle might be simplistic, but I'd have to go with the word "practical". It sounds better. . .:) Hope that helps!
