I'd have to say:

Vertigo
Dial M for Murder
North By Northwest
Rear Window
Rebecca

I have also seen I Confess and The Birds, and have just bought:

Strangers on a Train
The 39 Steps
The Lady Vanishes
The Wrong Man

I haven't watched them yet but imdb.com offers very high ratings for the first three in particular (apparently, his best vintage material) so I'm looking forward to them!

I intend to watch To Catch a Thief also since it's was recently released in a new, special edition.

I saw Dial M for Murder in 3-D at a movie palace, but I'd take The 39 Steps over it. Got to have a British-period one. I'd also want Notorious and Psycho and even The Birds (an early scary movie for me), but I can't bring myself to axe anything else from your list! Rope is a quirky choice, but then, Hitchcock had quirky movies like that one and Lifeboat. John Dall of "Rope" also stars in Gun Crazy, one of my five all-time favorites.

I see that the consensus at Netflix is: Dial M for Murder, North-by-Northwest, Rear Window, Vertigo, and ... the second season of Alfred Hitchcock Presents? No, To Catch a Thief.

Incidentally, To Catch a Thief was recently and righteously re-released on DVD by Paramount Home Entertainment. And there's finally a good DVD release of two of Hitchcock's silent movies, The Ring and The Manxman, from Lions Gate Entertainment.
