Egyptian cotton is considered to be the best quality of cotton. The fibers are silky and have the longest fibers of cottons grown anywhere else. The long fibers are stronger once they are twisted into yarn. It grows only in Egypt and is used for luxury goods.
Cotton jersey is a type of fabric made from cotton. (It could be any kind of cotton or it could be made from other fibers.) Jersey is a knitted fabric so it has some stretch to it, making it good for form fitting garments or clothes where you want a little give.
Cotton jersey made with Egyptian cotton would be a better quality fabric and would command a premium price.

Egyptian cotton has always been more expensive since the fiber from Egyptian cotton balls is longer than the fibers from other cotton sources. Longer fiber (staple) leads to softer smoother yarn (thread) and the cloth woven from it is also softer and smoother and perhaps whiter as well. The itching may be because of some chemicals used to treat the fabric before it is sold. Am not an expert on allergies and wont comment beyond that! :-)

egyptian cotton thread count is much higher
when they are combined i am assuming you just get a really soft stretchy material

between them both is the count of the threads, and i don't know what if you blend them together
