The Ottoman empire had been the "sick man of Europe" for centuries. It had been in decay for at least two and a half centuries when World War One broke out.
As was the case with the Nazis and the Jews, the Turks used the Armenians as a scapegoat for their problems, blaming them for the deterioration of the once great Ottoman Empire.
And so they waged an all out war on the Armenians, who like other groups had been trying to become independent from the Turks for centuries. So, a backlash against Armenian nationalism was the main reason, added with religious intolerance.
Within the Muslim domain, Christians and Jews were called "dhimmis" or second class citizens, and did not have all the rights that Muslims had. Armenians are overwhelmingly Orthodox Christian.

Turks love to deny the Armenian genocide.
Some muslims even deny the holocaust.
Many muslims in the Middle East like to believe that the US government and the "Jews" caused 9-11.
The fact is, the Turks hated the Armenians because they were Eastern Orthodox Christians. They are extremely intolerant of other beliefs. These uppity Armenians were also separatist. Time to hate, and time to kill......
They wanted to consolidate their power and remove undesirables, now they wish to pretend it didn't happen.

Your question contains the assumption that the turks DID start a genocide against armenians in particular during the ottoman empire. That's an assumption based on facts not in evidence.
