Not sure what your budget is, but I would look into Winter Park. It is just north of Orlando. They have a few venues that are nice. Also the Leu Gardens are very pretty.

You might want to think of heading an hour or so, either way, to one of the beaches. St. Pete and Clearwater beaches are some of the most beautiful around.
