Are the cooling fans coming on when you turn on the a/c? They should come on right away as well as when the car starts to overheat...if not, could be a bad temp sensor or fan relay. When you use the a/c, the condenser in front of the radiator adds more heat to get rid of and if the radiator is plugged or restricted in any way, it will overheat the car. Also, if the lower air dam below the bumper is damaged or missing, the air will not be drawn into the radiator properly and cause overheating. If all is good, the radiator may not be able to keep up with cooling the car under certain hot conditions and you may have to have a larger one installed or buy a product called "Water Wetter" which makes the coolant more efficient and lowers your temps by about 20 degrees...people with motor homes use it a lot for going up mountainous areas and car racers use it too.
