I am interested in the weather because of my pets' comfort, my garden, and because tornadoes can kill the hell out of me.

Except that weather can make or break an economy. If there was bad enough weather then crops can fail. That puts a lot of farmers under which puts a giant strain on the economy. The produce from those farmers will not reach market which will result in those goods having a higher price due to supply and demand. This puts more strain on the economy.
Also, weather affects how people travel. If it is a nice sunny day then going on a long trip is not that big of a deal. If it is snowing and there is ice on the roads then travel is a bit harder. People are not inside 24 hours a day. They have to go out and interact with nature at times. Even if they were, the weather will affect how well their AC and other climate controls are working. Air conditioners worker harder on very hot days. That means spending more money for air conditioning.
Finally, there is an emotional connection with the weather. If it is a nice sunny day, then people are usually in a better mood. If it gets cold and rainy then people get in a worse mood.

It's true that technology has made Americans less reliant on the outdoors. To wit, when it would get warm, people would go to the beach and socialize. Now, as you say we would turn on the AC. Of course these are not absolutes, nevertheless it is a cultural change brought about by technology.
So, to answer your question. I think it's because, it has universal appeal. Something that everyone can relate to, even though many of us prefer to stay indoors. As an addendum to that, Americans are now also known as "couch potatoes," and are more obese than ever. Quite probably as an after effect from relying too much on technology.

Not everyone has AC. There for most people come in contact with Nature itself.
Most the weather is being talked about in my area is due to the extreme heat, bitter cold or tornadoes so its always something to talk about.
Also here the weather changes about every 3 minutes day in an day out.

I live in So Cal-I'm outside ALL the time-but just drove 5 states to deliver a sculpture to South Dakota-of course I need to know the weather-what I am driving thru and what type of clothes to bring. In this case it was tornado weather in a 7AM installation in pouring rain. A/C? I don't think so---it all depends you know.
