The Bible talks about 2 kinds of wine. There is fermented wine and new wine. The wine that Jesus made was the new wine. The new wine is fresh grape juice. It is not fermented into alcohol. That's why it was commented that they couldn't believe that the new wine was saved for last. At party's they served the new wine or fresh grape juice first. As the night wore on and the fresh grape juice was gone they were basically served left overs so to speak. Which of course had been fresh grape juice but had fermented because it sat out for a long time.

The Bible teaches that the wine was the "best wine" so it was definitely of a high quality.
One thing to note though was that wine in that day was much more diluted than it is now (i think almost like a 10 to 1 ratio). The Bible doesn't give the specifics of the kind of wine- but just that the wine that Jesus made was of a higher quality than the limited wine that was served at the party.

the real deal as the host or a guest ? commented that the best was brought out first but the bible doesnt say that everyone got drunk off of it so it might of been non alcoholic.
