Fried rice is the most obvious answer, or if you want to jazz that up, you can mix in some of your favorite veggies sliced wafer thin (think carrots, celery, water chestnuts, green or red bell peppers, onions, etc), some bean sprouts, some thinly sliced chicken, beef or pork, a touch of low-sodium soy sauce and fix yourself a delicious stir-fry!

ARROZ CON LECHE
Vanilla Ground nutmeg Whole cloves Raisins Whole eggs Sugar Rice and milk
For every cup of rice add 2 cups milk. Wash rice and place in heavy iron pot, add milk and sugar. Mix well and cook slowly on medium heat. Stir often and add milk so that it does not stick. When tender add the rest of the ingredients. It is better to add the sugar at this time to help prevent it from sticking. Arroz Con Leche, may be cooked the day before and served cold, or warm, right after cooking. If served hot offer some butter.
These are recipes that we know by heart, so we never need to measure ingredients

Ingredients:
2 cups of rice
1 can condensed milk.
1 can evaporated milk.
2 cups milk
1cup sugar
1 tsp cinnamon
A few small cloves
½ cup raisins (optional)
½ stick of margarine
Directions:
Soak the rice 1 hour in water with the cinnamon and cloves.
After soaking the rice, add the 2 cups of milk and begin to cook for 1/2 hour, add more milk or water if the rice starts to get dry and stir frequently so that it doesn't stick.
Add the sugar, stir again, and cook for 10 minutes
Add the condensed milk and the evaporated and stir (add more sugar to taste as needed)
Continue cooking for about 15 minutes always stirring every 2 to 3 minutes.
After 15 more minutes of cooking, remove from the stove - Allow the "arroz con leche " to sit for about 10 minutes before serving. Serves 2-3.

arroz con leche -- rice and milk -- there is your recipe. warm some milk add the rice. keep adding milk until you get the right consistancy. you can season it with cinnamon, nutmeg, vanilla and or allspice. throw in some raisins if you want. i have had it with cinnamon, vanilla and a bit of lime and it was good that way too.

The fastest and easiest way is to boil it in a LOT of water and then reduce heat to a rolling simmer stirring.
The constant stirring and the action of the rice bumping together helps to break it down.
When it is the way you want, drain and continue.
You could do it the risotto way.

make rice balls. add 1 egg, and a 1/2 tsp of parsley, oregano, garlicpowder, basil or whatever seasonings you have and add grated cheese about 1/2 cup then mix all the ingredients together and shape into small or large balls then coat them with bread crumbs and then fry them in oil until golden brown.

add a can of cream of (chicken or mushroom) soup, cut up some chicken, add some salt, pepper, garlic salt, and onion salt. A couple shots of hot sauce. You can add some Parmesan cheese for a little more taste. Sounds kind of gross but I enjoy making it when I don't have a lot of time to cook.

rice pudding!
just get some milk...like about a gallon....put it on the stove..keep stirring until it is half of what u put in.....add the rice, chopped almonds..and other nuts u like...raisons, saffron and cardomon and about 1 cup of sugar or however much u want for it to be sweet.......stir for about 15 minutes until all flavors are combined on medium heat.....leave on stove (turn off stove) for about an hour...eat chilled or luke warm or hot.....its good!
