find calorie/fitness calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 300-400cal off that number and thats how much you need to lose.
eat 5-6 small meals a day (eat every 2-3 hours)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise 4-6 times a week for 30-50min, light weight training
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)

We don't know your height or weight, but I can tell you that I'm fairly certain that 1000 calories is too low for you. Most doctors recommend about 1200 daily. 1000 calories wouldn't be healthy, but it's also not a realistic goal. You said yourself that it's a far stretch from what you normally consume, so how long do you realistically think you would stick to a diet that strict? If you're like most people you'd be on it for days to a week before falling off the wagon and going back to old habits. Instead, you should start off slow. Try eliminating certain foods, such as sugary sodas, from your diet or maybe try not eating after a certain time in the evening for awhile at first. Ease your way into it. Don't try to go "all health food" right off the bat or you'll end up joining the rest of the yo-yo dieters in the world.

Well, actually that's ok for a day or two... but you wont stick to it.. and it is unhealty to eat so little. Your body prolly burns that much energy just to keep you warm and pump blood around your vital organs... so you need to re-assess your goals... otherwise your body reacts by shutting down stuff.. reducing your metabolism and resists your effort to lose fat.
Even if you are sedentary, you should at least eat the equivalent of your Basal Metabolic Rate. (BMR) you can calculate it here: http://www.bmi-calculator.net/bmr-calculator/
Your daily intake requirement to maintain your current weight is a good guide to how many cals you should consume to lose weight. With your level of exercise... (using the Harris Benedict equation: see http://www.bmi-calculator.net/bmr-calculator/) you would multiply your BMR by 1.55 to obtain your maintenance calorie intake...
Now, every day.. you just keep doing what you are doing in terms of exercise and you consume between 500 and a 1000 Cals per day less than your maintenance calorie intake.. and you will lose between 1 and 2 pounds per week.
You will find that the jump into this regime is manageable and effective... and not such a giant leap.

If on average you burn 2500 calories per day during your diet and you eat only 1000, thats 1500 burned a day. 1 pound is 3600 calories.
1500 * 30 days = 45000 calories
45000/3600 = 12.5 pounds
However, when you diet you lose a lot of water weight the first week. I recommend doing a 2 day liquid diet fasting period before you start your diet, for it will allow you to burn more fat in the month.

You never said your height or weight. 1000 calories may be too low for basic survival of bodily functions.
