at 5'11" a 19" frame will probably be good, however, you want to try the bike and make sure all the geometry feels right for you first you want to see if your inseam clears the top tube when you are straddling the bike in front of the saddle. next you want to ride it around to see if the head tube angle, seat tube angle and other geometry is right. i had bought a nice bike 2 yrs ago but i always felt like i was too far forward on the bike i always felt like i was going to go over the bars. i bought a Jamis Dakar which is very similar to my old bike but the angles are a bit different and it feels better, i feel more confident riding it ii now ride it more and handle terrain, jumps and drop offs with confidence again

The 20" and 26" refers to the wheel size and is not germain to the size of frame that you require. The measurement is taken from the centre of the crank to the top o f the seat tube. At 5'11" you should look at an 18" or 19" machine. I am 5'10" and ride a 19" Giant.
