Homestyle Meat Loaf
2 pounds ground beef
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
2 teaspoons minced onions
1 egg
1/2 cup breadcrumbs
1 can (8oz) tomato sauce
Preheat oven to 350.
1) In a large bowl combine ground beef, seasoned salt, pepper, minced onion, egg, & breadcrumbs.
2) Shape into loaf; put in a shallow baking pan. Pour tomato sauce over loaf. Bake for 55 - 60 minutes or till done.

I just tried this recipe the other day. It turned out super moist and almost melt in your mouth. My boyfriend and his buddies said it's the best meatloaf they've ever had. It's quite a compliment since I know their mothers are really good cooks!
Dad's Meatloaf with Tomato Relish
Recipe courtesy Tyler Florence
Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices
Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

Here is a Meatloaf recipe with a Spanish twist (SPANISH RICE).
INGREDIENTS
1 1/2 pounds lean ground beef
1 (4.4 ounce) package Spanish rice and sauce mix
2 eggs
1 tablespoon ketchup
1 tablespoon yellow mustard
2 tablespoons ketchup
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, combine ground beef, Spanish rice and sauce mix, eggs, 1 tablespoon of ketchup, and mustard. Mix thoroughly.
Coat the inside of a 9x5 inch loaf pan with 2 tablespoons of the ketchup. Transfer the meat mixture to the loaf pan. Top with the remaining ketchup.
Bake in a preheated oven for 1 hour or until cooked through.

Get some lean ground beef/ground chuck doesn't matter use how ever much you'll think you'll need to feed errybody
a can of tomato sauce and paste
bell pepper
onion
shredded cheese
salt pepper, seasoning salt
1 egg
breadcrumbs or crushed up croutons
and some potatoes preferably butter golds
preheat oven to 375 (60-70 mins depending on how many pounds of beef you use)
get out your beef and start to break it up and season it
dice up the bellpepper and onion.. i like to season n sautee it first... then add it to the meat
scramble that egg in a separate bowl and then add it to the meat as well. then start to mix it all up and start to shape it in a loaf pan or whatever kind of deep square pan you have.
mix your tomato sauce and paste in a separate bowl, add some sugar to reduce the acidity and season it how you want. pour that over your meat loaf.
When the meatloaf is near being done, then add your breadcrumbs and cheese on top. because those breadcrumbs will brown quick so that's why i do at in the end...
cut up and boil some potatoes to make some mash potatoes... serve with some hot rolls or a salad and you're done!!

this is my recipe... all my friends love it and my fiance that used to hate meat loaf likes it too...
put one pound of ground beef into a large bowl. mix in 2 eggs, about 1/2 a cup of ketchup, and 1/2 a cup of mustard (yes mustard) together with your hands (its the best way to mix it up good enough)
then lightly sprinkle season salt, minced onion (i buy the jar of it), pepper, and maybe some garlic powder. and mix all that in, with your hands some more.
use hunts tomato sauce (NOT paste)
pour one small can of the tomato sauce on the bottom of a baking pan and mix in just a little brown sugar.
~note if you want you can also mix some brown sugar into the ground beef...
then take the meat out of the bowl and form it into a loaf shape. if you want it to cook faster break it in half and make 2 smaller loafs.
then pour another small can of tomato sauce over the loaf(s)
bake in the oven at about 350 for about 20-30 minutes and cut in half to see if its cooked all the way through.
it is sooo good if you make home made mashed potatoes and use the juices from the meat loaf as the gravy!
you can always add more tomato sauce (i do). but please whatever you do DO NOT buy the cheap kind of tomato sauce, use hunts it will make a world of difference.
try this recipe its so good. sorry if its kinda complicated i have never wrote out a recipe and didnt wanna give you one from some other web site. i have tried lots from other web sites and they are never as good as this one. my grandmother taught me how to make it a long time ago but over the years i have changed it up some to make it a little better i think!!!

Here's one that has taken kudos with all my friends and family: 1-1/2 lb lean ground beef mixed with one diced onion, about 1 cup oatmeal, 1 egg, several squirts of Worcestershire sauce and 1/2 can of tomato soup. Mix thoroughly and half. Press one half into a loaf pan and cover it with 3-4 slices of cheese (American or cheddar) Place the other half of the meat on and seal the edges thoroughly so the cheese won't run out when it bakes. Mix the remaining soup, 1/4 cup ketchup. 1/4 cup water, worcestershire and 2 tbsp brown sugar. Pour this on top and bake for 1 hour or til thoroughly cooked. Enjoy! EASY ITALIAN MEATLOAF
2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste
Preheat oven to 375°F.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.
Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.
Bake uncovered 1 1/2 hours.
Variation: Substitute your favorite barbeque sauce for basting

Meatloaf_ any seasonings you have ! Use good beef as you dont want too much grease....for 1lb of meat add 1/2 cup of breadcrumbs ( substitute crumbled crackers if you need) and your fave seasongs to taste. I like onion ( half) tony chachares( cajun season all) parsley, oregano, pepper, garlic and roll the meat around to mix the seasonings , shape it (the thinner the faster it will cook , bout 1inch thick) and bake covered with foil. I love this easy recipe ...its sooo homey, It cooks well at 375 for about 20-30 mins(again depending on how thick)

form a big hump like meat loaf and dig out center add white cheddar alot and then fill it with meat u dug out and then drizzle some of the bbq sauce u used on the top cook at 350 degrees for an hour

A fast and easy recipe is as follows:
3 lbs hamburger
3 pkges onion soup mix
7eggs (whole)
2 pkges saltine crackers
1 lg can of tomato sauce
salt, pepper and garlic
In a large mixing bowl put your hamburger and season it before adding anything else..
next blend eggs and then add to the hamburger in the lg mixing bowl, then mix in the crackers and the tomato sauce.. mix together completely. Put in a large covered baking dish and let bake for 45 minutes or until firm.
This recipe can also be used for fried meatloaf burgers, just don't use as much tomato sauce, make into patties like normal and fry.. My kids love them...
