I love artichokes, but never actually cooked them. I recently had them grilled at a restuarant and it was great. Does anyone have a good recipe for grilled artichokes?

Cut the very top of the artichoke off with a knife about 3/4" to 1" down from the top. The tops can be very spiny and sharp. With kitchen shears trim the tips of as many leaves as you can below where you have cut the top off. Trim the stem to about 3/4" or 1" as well, you can't eat most of it anyway (you can however eat the center part of the stem which tastes much like the heart of the artichoke).

With a large knife cut the artichoke in half lengthwise and scoop out the choke or the hairy looking bit inside. I find a grapefruit spoon or a small melon baller works well.

Brush the artichokes with garlic oil (oil that has been steeped with garlic for several days) You can do this yourself by filling a jar half way to the top with peels garlic cloves and filling the jar to the top with olive oil.

After you've gotten your coals to the glowing point, push them to the sides of your grill so the artichokes are not exposed to direct heat.

You can now cook them one of two ways. Place the artichokes cut side down on the grill and put the lid on the grill to cook them through or wrap them in foil and place them cut side down on the grill.

You'll have a more concentrated, charcoal taste if you don't wrap them and a more steamed texture if you do.

Grill them until they're tender (you'll be able to pierce them with a knife easily.

For a dipping sauce, mix 1 part melted butter and one part extra virgin olive oil (the garlic oil is great for this). Garnish your plate with lemon wedges and serve.
