What about vegetarian lasagnas?

Here's one of my favorites...It's a classic lasagna!

Lasagna

Sauce:
3 tablespoons extra-virgin olive oil
1 minced onion
2 cloves minced garlic
1/2 teaspoon dried crushed red pepper
1 (28-ounce) can crushed Italian tomatoes
1 tablespoon oregano
1 bay leaf
2 tablespoons Parmesan

Lasagna filling:
15 lasagna noodles
2 pounds ricotta
Salt and pepper
1 1/2 cups grated Parmesan
1 pound mozzarella, grated
4 egg yolks

Heat oil in a large skillet over medium heat. Saute onions, garlic, and red pepper for 1 to 2 minutes. Do not let garlic brown. Add the tomatoes, oregano, and bay leaf to skillet. Let simmer until flavors blend, stirring occasionally every 1/2 hour. Stir in Parmesan, and remove bay leaf. Sauce is ready for lasagna to be made.

Heat oven to 350 degrees F. In a large pot, boil water, and cook pasta close to al dente. In a large bowl combine the ricotta, salt, pepper, and Parmesan, and mix until well blended. Mix in egg yolks and set aside.

In a 13 by 9-inch baking dish, spread a thin layer of marinara sauce and cover with noodles. Spread a layer of ricotta cheese mixture over noodles. Top with mozzarella, another layer of sauce, and repeat. The third layer should be topped with sauce and mozzarella. Cover and bake for 40 minutes, remove cover and bake for an additional 25 minutes. Remove from oven, and let stand for 20 minutes.

To serve, cut into squares, and serve with drizzled marinara sauce.

Go to foodnetwork.com and search The Lady and Son's Lasagna by Paula Deen. Everyone loves it!!!! You can read other reviews while you are there. The sauce is easy to make and will make your house smell really good. I did find it to be watery though so don't add the water until you think you need it. I also use Ricotta instead of Cottage cheese. Sometimes I double the sauce and ricotta mixture. Gruyere cheese is expensive but Imported Swiss tastes the same and is half the price.

Alfredo Chicken Lasagna:

SERVINGS 3

TOTAL 65 min.

INGREDIENTS

* 6 ounces boneless skinless chicken breast, cut into bite-size pieces
* 1 cup sliced fresh mushrooms
* 2 tablespoons chopped onion
* 1 garlic clove, minced
* 1 tablespoon olive oil
* 1 tablespoon all-purpose flour
* 1 cup Alfredo sauce
* 3/4 cup 2% cottage cheese
* 1/4 cup plus 2 tablespoons shredded Parmesan cheese, divided
* 1 egg, lightly beaten
* 1/2 teaspoon Italian seasoning
* 1/2 teaspoon dried parsley flakes
* 4 lasagna noodles, cooked and drained
* 1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese

DIRECTIONS

In a large skillet, saute the chicken, mushrooms, onion and garlic in oil until chicken is no longer pink. Stir in flour until blended; stir in Alfredo sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. In a small bowl, combine the cottage cheese, 1/4 cup Parmesan cheese, egg, Italian seasoning and parsley.
Spread 1/2 cup Alfredo mixture in an 8-in. x 4-in. x 2-in. loaf dish coated with nonstick cooking spray. Layer with two noodles (trimmed to fit pan), half of the cottage cheese mixture, 3/4 cup Alfredo mixture and 3/4 cup mozzarella cheese. Sprinkle with remaining Parmesan cheese. Repeat layers.
Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until bubbly. Let stand for 10 minutes before cutting. Yield: 3 servings.

This recipe was initially developed by former Governor Jesse Ventura's wife when he was in office:

2 lbs ground beef or hot Italian sausage (I prefer the sausage)
1/2 yellow onion, diced
1 tsp ground pepper
3 T dried Italian herbs
1 28 oz can tomato sauce
1/4 cup olive oil
2 cups shredded Italian Blend Cheese
1 small package Velveeta Cheese
1/2 cup grated Parmesan
1 pkg lasagne noodles (16 noodles)

Brown onion with hamburger or sausage. Drain. Add seasonings and tomato sauce. Add olive oil and simmer for 15 minutes while lasagne noodles cook. Slice Velveeta into 1/4 inch slices. Layer in baking dish: noodles, sauce, velveeta, shredded cheese, and repeat ending with sauce and cheese. Cover and bake at 350 degrees for 45 minutes or until bubbling and hot. Serve with hot french bread and a green salad.

Those are as varied as egg salad recipes, but I don't cook my noodles, if you make it several hours (4-5) before you cook it the noodles will soften, or use those you don't need to cook (it will say it on the box). I also like to add ricotta cheese to my lasagna..

like both, fruits: berries, oranges, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... I actually guess the two are great.
