I try to keep an open mind in this area, after all someone, somewhere eats what you are being served, right?
When my children first began eating solid foods they always spit out new tastes and new textures. I always waited a week or two and offered them again. I did this over and over again until they accepted the new food.
Once my children (and now my grandchildren) were of school age they were allowed to choose two foods they NEVER had to eat; however, these foods were written in STONE! Once chosen they could not change them. None of them has ever chosen the second ;-) One of mine chose chicken, one chose pancakes and one chose oatmeal!!
But the idea worked - the children thought long and hard before choosing a food they refused to eat and surprisingly enough no one ever chose spinach!
I also had a two bite rule. Each child was expected to eat two bites of each food served at each meal unless it was one of their two foods. Knowing that there was a reasonable limit to what they were expected to eat made the mountain into a mole hill.
I often regaled them with stories of the first time they tasted ice cream and how they made horrible faces and spit it out. That seemed to help them understand that most tastes are acquired.

I don't like liver, brussel sprouts or salmon. If something has a strong smell, it can turn me off so I just can't sample it. I don't mind trying a bite of something new occassionally. I think you are being fair in having your son at least try some new things. Please don't make him eat it though, I tried that once with my granddaughter and she gagged. No more! Try to make a game out of it if you can. Maybe make a catsup face if catsup would be good with the new food. Or salad dressing. Kids love games and some times that can change the atmosphere. I am very picky with certain things I eat, I like to either know the person who has cooked the food extremely well and trust their hygiene or have made it myself, otherwise I get a bit panicky about eating it. I have a few exceptions I am normally ok eating in restaurants as long as they are good ones, I would not eat Lasagna cooked by anyone except me or my Husband period, I don't know why I just wouldn't.
I think your way of teaching you son is great and I do it that way with my son, I also try not to mention the foods that I don't like in front of him so I don't pass my dislikes onto him.

Pretty much the same as yours. I did the same thing with my children and they grew up liking just about everything. I love to try new things. If I am in a restaurant I like to order different things for an appetizer rather than the main dish. That way if I don't like it I still have the main meal coming. If I like it I can order it next time. I enjoy food and it can be an adventure. When I find things I like I can look up recipes and try them at home. Though the years I have found very little that I don't like.

I am terrible with food. I have to know exactly what it is and what is in it before I will even consider it. This is largely due to allergies and being allergic to PORK and most seafood I do have to be careful. Then there are the few things I just can’t stand like garlic.. HATE IT! Once I know what the food item is I will give it a go if I have never tried it before.

I avoid meats, and most animal products, but beyond that I search out different foods. I figure if something is considered a delicacy somewhere on this earth, by someone, than it has to be worth trying.
I am constantly amazed at the way some people won't even try something new.

I will try any thing as long as it doesn't eat me first. I had a professor once ask the class if they would try horse if he brought some in. I was the only one that said yes. I wouldn't eat it routinely, but I would try it. I knot that's gross, but you don't know what something is like until you try it. I think raw oysters look disturbing, but they taste great! I do want to know what it is first, though. The only things I've found I don't like are: beets, radishes, asparagus, and amberjack fish.

I have to be careful with what I eat. I'm allergic to tree nuts and eggplant, so that cuts out most Greek food and lots of Middle Eastern food. After asking the question I must ask (Does this have tree nuts or eggplant?), I'm fairly open to new foods. I believe that, barring any food allergies or sensitivities, a child should be encouraged to try new foods.

I try anything. There are very few foods that I won't eat.
I fed my kids a huge variety of food before they turned 2 and they are fantastic eaters now. They need to get used to trying new things early so they like it later.
And for me, I made one dinner, and if they were hungry, they ate it, if not, they didn't. I didn't make special kid food once they were big enough to eat everything, and that seemed to help alot too.

I hate the taste of milk and cannot stand onions. Other than that I usually am open to trying new things...unless of course they were pretty outlandish like Rocky Mountain oysters or something like that. I don't think I could get past the idea of eating bull testicles.
