Like if I eat an entire molten chocolate cake from Chili's when I should be dieting (true story)... will I see it or feel it or gain it in two days, two weeks, five hours? Does that make sense? And is there anything to do to negate those calories that you eat so it doesn't sabotage your diet? Other than just exercising... can you think of anything else to do when you are like me and you freak out and eat 1000 more calories than you're supposed to be eating?

I've heard it takes about 2 days but I don't know how accurate that is. There's no way you can "negate" the calories without exercising more or just being more strict in your diet for a while to make up for the extra calories.

measurable fat storage occurs over an extended period of time. when you consume high carb meals there may be some "weight" gain on the scale but it is from an excess of water that is stored when glycogen is stored in the body. so it's not like you can eat a cake one day and in 3 days you have gained a couple of lbs of fat.

the caloric intake over the course of the week is more important than from day to day in terms of weight management.

It depends on your body. I have the same problem. Hersheys came out with a 67% coco bar that's great. If you eat it slowly, and at the end of the day it helps. Otherwise eating spicy food after will send it through your body faster.

I heard that it takes 2 to 3 days for food you eat to show up on your body. I have found this to be true with me also.

well if you are lucky you'll just feel gross, however if you were me, you'd gain 12 pounds within the 20 minutes after eating it.
