u can find good rhubarb at any open air/farmers's market.
this is the easiest in my book:
Ingredients:
6-7 stalks [1 3/4 pounds] fresh rhubarb,
peeled and cut into 1/2 inch thick slices [about 5 cups]
1/2 teaspoon fresh squeezed lemon juice
1 teaspoon grated lemon rind
1 1/2 cups sugar
1/3 cup flour
Pinch salt
1 [15 ounce] box refrigerated piecrust
2 tablespoons butter, cut into pieces
1 egg yolk
1 teaspoon cold waterProcedure:
Preheat oven to 400 degrees. Place rhubarb, lemon juice and rind n medium nonreactive bowl. In another bowl, combine sugar, flour and salt. Add to rhubarb and mix well. Use one crust to line bottom of ungreased 9 inch pie plate. Prick bottom with fork. Add the rhubarb mixture. Dot with butter. Place the second pie crust on top of the pie. Flute the edges to seal. Combine egg yolk with cold water. Brush mixture over top crust. Prick the top crust with fork to create vents. Bake 20 minutes. Reduce heat to 350 degrees and bake an additional 20 minutes or until the crust is golden brown. Cool slightly and serve.
Yield: 6 - 8 servings

If you want something really simple and good, make a rhubarb crisp, instead! Right now in the midwest, rhubarb is in full swing - I have been picking mine for weeks now! I would call around to your local grocers, otherwise, check out some farmers markets!
Anyway...here is a pretty easy pie recipe...
1 (9 inch) pie crust, unbaked
3 c. cut up rhubarb
1 egg, slightly beaten
1 1/2 c. sugar
3 tbsp. tapioca
Dash salt
1 c. sour cream
Blend egg, sugar, tapioca, salt and sour cream. Add rhubarb. Pour into pie crust. Bake 450 degrees 10 minutes. Reduce heat to 350 degrees and bake 35-45 minutes until firm and lightly browned.
And here is a great rhubarb crisp...
1 pound fresh rhubarb, cut into 3/4-inch pieces, about 4 cups
1 cup sugar
1 1/4 cup all purpose flour
1 teaspoon cinnamon
1 cup firmly packed brown sugar
1/2 cup old-fashion rolled oats
1/2 cup unsalted butter (1 stick), melted but not hot
Vanilla ice cream
Preheat oven to 375 degrees F.
In a large bowl combine rhubarb with sugar, 1/4 cup flour, and cinnamon and transfer into four 4-inch individual baking dishes. In a bowl combine remaining 1 cup of flour, brown sugar, rolled oats, and butter, mixing well. Sprinkle over the rhubarb mixture and bake for 35 minutes until topping is golden brown and rhubarb is tender. Serve warm with vanilla ice cream.

I don't usually see rhubarb except in the better supermarkets. However, it's often at farmer's markets. It's also very easy to grow if you have land or a garden. It's a perennial that grows like a weed.
You absolutely MUST try my grandma's recipe. It's simple, easy, and delicious.
Grandma Edna's Rhubarb Custard Pie
(The recipe is called rhubarb custard pie, though technically, it’s probably closer to a rhubarb cream.)
2 eggs
3 cups chopped rhubarb
3 tbsp flour
1 – 1 ½ cups sugar (my mom and I prefer 1 cup)
Mix ingredients together, and pour into unbaked pie shell. Add top crust if desired. Bake at 375 degrees for 50-60 minutes.
Note: I have sometimes added ¼ tsp nutmeg to the filling.

When I lived in Washington state, we used to eat this like 4 times a week, hope you'll like this recipe...........
Ingredients..................................
Pastry for a 2 crust 9 inch pie
4 cups chopped rhubarb, fresh or frozen
2 cups sliced strawberries
1 1/3 cups white sugar
1/4 cup cornstarch
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1 egg, beaten
Directions:
Preheat oven to 425 degrees F. Roll out half the pastry and line a 9 inch pie plate. Trim leaving 1/2 inch over the pie plate.
Combine rhubarb strawberries, sugar, cornstarch, lemon juice and cinnamon. Place in the pie shell
Roll out remaining pastry and cut into 1 inch strips. Make a lattice top crust on the pie by crisscrossing the strips over the filling. Trim the strips even with the pie plate. Fold the 1/2 inch of the bottom crust over the ends of the strips. Seal and flute the edges. Brush lattice with egg.
Place on a baking sheet or tinfoil in the oven and bake for 15 minutes, until the crust starts to brown. Reduce heat to 375 degrees and continue to bake for 50 to 60 minutes, until crust is golden, rhubarb is tender, and filling is thickened.

I found several recipes for rhubarb pie on www.allrecipes.com
Just type in rhubarb in the search and you will get them.
I just made a strawberry rhubarb pie today, it called for tapioca and I put in flour instead because I was looking at the wrong recipe but it turned out good anyway.
Don't know where you can get it in NC though.

This one looks really easy... only need rhubarb, sugar, flour, butter and a crust (buy one from the refrigerated section at grocery store). Also, you'll probably have to get your rhubarb from the pie filling section at the grocery store too.
