I like to make a fruit salad when it's hot. I take a large can of fruit cocktail, a medium size can of pineapple, a can of Mandarin oranges (drain the juice from the canned fruit), and some fresh apples, bananas, grapes, cantaloupe, and some Cool Whip (it doesn't take a lot), mix them all together and refrigerate. Then I take English muffins toast them and butter them, then I sprinkle Parmesan cheese on them, put them on a cookie sheet and broil them for a couple minutes until brown. It only takes a couple minutes, not enough time for the broiler to heat the house up. When the muffins are done, take the salad out of the refrigerator and eat! It's so cool and refreshing when it's hot outside.

Here is my favorite fruit salad. BTW, if you don't have Scottish Cheddar, use Cabot White Vermont Sharp Cheddar.

Tayside Tang

Originated in Dundee, Scotland nearly 200 years ago.

Main Ingredients:
2 oranges
4oz (100g) Scottish cheddar cheese, diced
1 grapefruit
4 slices of orange

Dressing:
2 tablespoons mayonnaise
3 tablespoons lemon juice
2 oz grated cheddar
Salt and pepper
Paprika

Method:
Remove the skin and pith (membrane) from the whole oranges and grapefruit and cut into bite size pieces and mix with the diced cheese.
Make the dressing by combining the mayonnaise, grated cheese, lemon juice and seasoning to taste. Pour over the fruit and cheese. Place in individual dishes and sprinkle with paprika and add the slice of orange on top.

Try nonfat vanilla or lemon yogurt (large container) mix in instant vanilla or lemon pudding mix. It's a delicious dip for fruit kabobs. I love to make antipasto on hot days. Browse the deli for assorted meats, olives, marinated mushrooms etc. and never turn on the oven.

I love this fruit salad recipe. I use banna's, strawberries, pineapple, manderines, and whatever else I am in the mood for. All you do is take one package of creamcheese blend it with about 1 cup of sugar.. or 1/2 cup if you like yours a little less sweet, take a container of coolwhip and mix. fold in your fruit and enjoy. This is a very wonderful recipe.

try a green salad with goats cheese toasties (so yum) or bbq meat or something light along those lines... to make a dinner "light" u basically need to make sure there are no heavy carbs like pasta or rice involved... and to make a fruit salad just mix all sorts of fruit together, whatever u fancy and serve with icecream....
